World Whisky Day Recipe | Dark Chocolate and Irish Whiskey Banana Bread Loaf

In honour of World Whisky Day, we're sharing our favourite Northern Irish Whiskey Recipe- Dark Chocolate and Irish Whiskey Banana Bread Loaf Cake courtesy of the Great British Bake Off's Iain Ross.

A great recipe for if you have some overripe bananas that need eating... and a bottle of whiskey collecting dust on the shelf!

Ingredients

270g ripe bananas

115g melted butter

150g sugar (Iain uses caster, we used brown)

2 tsp vanilla extract

60ml Irish whiskey (we love Bushmills!)

200g plain flour

1 tsp baking soda

1 tsp salt

175g dark chocolate

Method:

1. Preheat your oven to 170C (fan) and line a loaf tin with parchment.

2. Mash the bananas in a large bowl

3. Whisk in the eggs, melted butter, sugar, villa, and whiskey until combined

4. In a separate bowl, mix flour, baking soda, and salt. Then fold in the wet ingredients until just incorporated.

5. Chop the dark chocolate and stir through mixture.

6. Pour the batter into your prepared loaf tin and smooth the top.

7. Bake for 55-60 minutes, or until a skewer inserted into the centre comes out smooth.

8. Cool in the tin for 10 mins, then transfer to a wire rack to cool completely.
