When are pears in season in the UK?
The British Pear season runs from late summer into early autumn, with most varieties harvested between the months of September and November. By prioritising produce that is both locally-sourced and in-season, you'll enjoy the freshest, most vibrant tasting fruits!

Ingredients:
For fruit filling:
- 4-5 pears
- 125g caster sugar
- 2 tbsp plain flour
- 3 tbsp butter (frozen, cubed)
- 2 tbsp soft brown sugar
- pinch of salt
For the pastry:
- 120g unsalted butter (room temp)
- 50g caster sugar
- 1 egg yolk
- 125g plain flour
- pinch of salt

Instructions:
To make the pastry:
1. Add your room temp butter and sugar to your stand mixer. Mix at medium speed until light and fluffy (approximately 2 mins).
2. Add in the egg yolk. Mix for 30 seconds.
3. On a low speed, add flour and salt until combined.
4. Remove the dough, wrap in cling film and refrigerate for an hour.
5. Preheat your oven to 180°C and grease your tart pan with baking spray.
6. Using your fingertips, press the dough gently into your tart pan and poke
7.Cut a piece of baking paper to size and cover the tart. Fill with pie weights or dried beans.
8. Bake for 15 minutes until slightly browned.
9. Remove from the oven, remove the paper and weights. Stand to cool.

To make the fruit filling:
1. Chop your pears lengthways into slices ~1cm thick.
2. Add your pears to your pastry crust in a circular fan design.
3. Loosely combine the sugar, flour, and butter until it makes a crumb consistency.
4. Top the pears with your crumble mixture.
5. Sprinkle your brown sugar over the tart.
6. Bake for 35-40 mins until golden brown.
7. Remove and stand to cool.
8. Enjoy with custard, cream, ice cream, or alone!
