Perfectly spiced, delightfully soft, and easy to make, these cinnamon & ginger biscuits are just what you need to get into the Christmas spirit.

Ingredients:

  • 280g plain flour
  • 1 tbsp ground ginger
  • 1 tbsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 1 tsp bicarbonate of soda
  • 0.25 tsp salt
  • 170g butter (room temp)
  • 200g granulated sugar
  • 75g brown sugar
  • 1 egg

Instructions:

  1. Preheat your oven to 180C (fan), and line a baking tray with parchment paper and set aside. 
  2. In a bowl, sift together the flour, ginger, cinnamon, nutmeg, bicarbonate of soda, and salt.
  3. Then, in a second bowl, mix the butter and both sugars until light and fluffy (this should only take a few minutes). Beat in the egg until just combined. 
  4. Stir in the flour mixture until combined and a dough forms (you might want to get your hands dirty for this stage!).
  5. Separate the dough into one-inch balls, roll in sugar and place about 2 inches apart on your baking tray. Gently flatten each ball with your fingers, and then place the tray in the fridge for approx 30 minutes.
  6. Bake in the oven for 10-12 minutes or until slightly golden. Your cookies should be soft in the middle and a little crispy on the edges. Now, light your Spices candle and tuck in!
